Fruit tarts: raspberries, blueberries, vanilla pastry cream, and graham cracker crust

I can’t seem to figure out why the vanilla pastry cream always gets lumpy overnight in the fridge, even after straining it beforehand. I use a small sieve and push the custard through it with the back of a spoon, which seems to work well for the most part. Maybe I need to get fancy and buy a chinois, ha!
