Day 3 of eating healthy means a quick stir-fry with turkey breast (2 breasts, cubed), firm tofu (1 block of tofu from Trader Joe’s, cubed), eggplant (leftover from last night’s dinner), and green bell peppers (2 peppers, chopped). I stir fried the turkey by itself first until it was almost fully cooked, then took it out before stir frying the tofu and eggplant. I let it cook until the eggplant is soft before adding back in the turkey and the green bell peppers to finish off. I used a tablespoon of oyster sauce for flavoring and was VERY tempted add in some of my mom’s XO sauce but came to my senses after seeing all the oil that’s in it. Still good without it though and surprisingly, I really liked the tofu too. Best part – there’s enough for 2 more meals!
